I'm busy getting ready for the big 4th of July/housewarming party tomorrow (don't worry, you'll hear all about it!) so crockpot baked potatoes were perfect for dinner tonight. I wash and dry them, prick 'em a few times, then wrap them in foil. This keeps them from discoloring...but you must be sure to dry them first or you'll get rust spots. 4-6 hours on high, depending on the size of your spuds, and you're good to go! I topped mine with some EB spread, canned veggie chili from TJ's, Tofutti Better than Sour Cream, Frontier Bac'uns, and green onion. This meal is always a big hit with the Fam and is super fast (not counting the slow cooking) and doesn't dirty up a bunch of dishes! It's a mega bonus that you don't have to turn on your oven for an hour and heat the whole house up during Summer! Baked Potatoes year round!!! Woohoo!
