#142 Roasted Vegetables Over Rice with Teriyaki Sauce

I remember everything that Michelle has ever cooked for me. This is one of her creations. <3
This was easy and & yummy. At 350 I roasted: turnips, carrots, broccoli, shallots, zucchini, cremini mushrooms, and grape tomatoes. While they were roasting in the oven, I was cooking aborio rice. When the veggies were done, I started to steam a bunch of kale and chop an avocado. I spooned the veggies on top of the rice. Then I added the steamed kale and sprinkled on the avocado. To finish it off, I drizzled a little teriyaki sauce on top. Mmmm!
