#311 Scrambled Tofu Breakfast Bahn Mi

This was the first thing I made from Terry Hope Romero's newest cookbook, Vegan Eats World. I love breakfast for dinner so that's when we had it! I just so happened to have pickled carrot and daikon on hand so that reduced the prep work a lot. Everybody enjoyed this sandwich, we'll definitely be eating this often!
